Toast for dinner

Well, the little house guest has returned home and the place is incredibly quiet.  The Mr and I took advantage of the afternoon alone by getting lunch at Panera Bread and then visited the local home improvement stores in search of ideas for fixing up the house.   It was nice to go out and have adult conversations (also, dream up ideas that we’ll probably never afford, but it’s fun anyway) after a week of constantly entertaining a little one.

After a week of what felt like perpetual dish washing and kid-friendly foods that I wouldn’t normally regularly eat, I needed something different. After all, there’s only so many bowls of mac & cheese a girl can eat. So we had toast. Delicious, tasty toast.  I found a loaf of “everything” bread on the discount rack for $1 the other day that I needed to use, so I cut it up, buttered it, and threw on a mix of Roma tomato, red onion, fresh pressed garlic, salt and pepper and then top the whole thing off with a piece of provolone cheese and baked it in the oven until the cheese was deliciously melty, the bread toasty, and called it dinner.  And I think it might just have been what I needed today – something easy, something simple, something completely and totally flavorful, and something that the child would entirely dismiss because there would be something on it she didn’t like. Bonus points for enjoying it on the patio with a beer and knitting. ♥
